- 40g cheddar cheese
- 250g British beef mince
- 1 gem lettuce
- 2 tsp ground cumin
- 5.5g beef stock mix
- 20g chipotle paste
- 16g tomato paste
- 30ml mayonnaise
- 1 carrot
- 1 lime
- 4 white potatoes
- 1 shallot
- Pepper
- Salt
- Sugar
- Vegetable Oil
Cooking Instructions
- Preheat the oven to 220°C/ 200°C and boil half a kettle. Cut the potatoes with their skins on into thin chips and add them to a large baking tray. Add a few drops of vegetable oil and a pinch of salt and mix up everything properly. This should give a crisp to the potato from the inside. Slide the tray in until the chips are golden and starting to develop into crips.
- While the oven does the chips; peel and slice the shallot. Heat a large and wide-based pan with a considerable amount of vegetable oil over a medium flame. Once the pan is hot, add the shallot and ground cumin and cook for 2 minutes.
- Now take the beef mince and add it to the pan and cook for 3-4 minutes. Break it up with a wooden spoon. Meanwhile, dissolve the beef stock mix in 150ml of boiled water. Add the tomato paste, chipotle paste and a pinch of sugar and make a paste out of it. This will be used as the spicy stock. Now add the spicy stock that you just made to the beef mince. Reduce the heat to medium-low and cook for 6-8 minutes.
- Once done, remove the pan from the heat and set aside for later. This will be the beef chilli. Combine the mayo with the zest and juice of half a lime, 1 tablespoon of water and a generous pinch of salt and pepper in a small bowl. This will be the zesty slaw dressing. Finely grate the cheddar cheese over it.
- Once the chips are done, push them into 2 piles on the baking tray. Top each pile with the beef chilli and then the grated cheddar cheese and return the tray to the oven for 5 min or until the cheese has melted. - Top, tail, peel and grate the carrot. Wash the gem lettuce, then pat it dry with kitchen paper and shred finely. Ingredients
- 250g British beef mince
- 1 tsp dried basil
- 1 tsp ground smoked paprika
- 11g beef stock mix
- 15ml Henderson’s Relish
- 1 spring onion
- 32g tomato paste
- 1 garlic clove
- 30ml mayonnaise
- 1 red pepper
- 4 white potatoes
- 1 brown onion
- 20g mustard ketchup
- 15ml white wine vinegar
- Pepper
- Salt
- Vegetable oil
Cooking Instructions
- Preheat the oven to 220°C/ 200°C. Cut the potatoes (skins on) into fries. Add the fries to a baking tray with a considerable amount of vegetable oil and salt and pepper. Give everything a good mix-up and put the tray in the oven for 20-25 minutes. While the fries are being cooked, peel and finely cut the brown onion. Deseed the pepper and dice
- Heat a large, wide-based pan with a small amount of vegetable oil over medium-high heat. Once hot, add the diced onion to the pan with a pinch of salt and pepper, 2/3 of the ground smoked paprika and half the dried basil and cook for 5-6 minutes.
- Whilst the onion softens, peel and grate half the garlic, then finely slice the remaining garlic. Trim, then slice the spring onion. Boil half a kettle of water.
- Combine the mayo with dried basil, remaining ground smoked paprika, grated garlic and 1/3 of the remaining white wine vinegar. This will be your smoky ranch dressing
- After softening, add the diced pepper and sliced garlic to the pan and cook for a further 1-2 minutes. Once fragrant, add the beef mince and cook until beginning to brown, breaking it up with a wooden spoon as you go. Cook until cooked through. Once cooked through, add the remaining white wine vinegar to the pan and cook for 30 seconds or until evaporated.
- Meanwhile, dissolve the beef stock mix and tomato paste in 200ml boiled water, then stir in the mustard ketchup and Henderson’s Relish. This will be your mustard ketchup stock. Add mustard ketchup stock to the pan and cook for another 4-5 min until the sauce is glossy. This is your sloppy joe mixture. While serving add a layer of fries to a plate and top that with the sloppy joe mixture. These are your sloppy joe loaded fries. Dollop over the smoky ranch dressing and garnish with the sliced spring onion
