1. Cauliflower and Three-Cheese Gratin
Method
STEP 1
Preheat the oven to 200 degrees Celsius/fan 180 degrees Celsius/gas six and bring a big pot of salted water to a boil. Boil the cauliflower heads for 10 minutes in the pan. Drain thoroughly, then steam dry for a few minutes before brushing with one tablespoon of oil and roasting for 30 minutes. Put in a baking dish.

In a pot with a bit of salt, gently cook the onions, bay, and butter until tender and golden. Stir in the flour and mustard powder until no dusty parts remain, then slowly add the milk to form a creamy sauce. Allow to thicken for 4-5 minutes, then mix in the cream. Method
STEP 1
Preheat the oven to 220°C/fan 200°C/gas mark 7. Toss the cauliflower florets in a basin with the olive oil and season well. Place on a large baking pan, leaving space between each floret. Roast for 20-25 minutes or until faintly browned and tender with a knife. Allow cooling slightly. Reduce the oven temperature to 200°C/fan 180°C/gas 6.

Place the butter in a medium-sized saucepan and, after melted and bubbling, add the plain flour. Cook, constantly stirring, for 5 minutes or until the butter turns a deep golden brown. Fill a measuring jug halfway with milk and cream.

Reduce the heat to low and add a few tablespoons of the milk mixture, whisking quickly. It will make a thick paste that may appear split at first but will soon come back together. Continue adding the milk, 2-3 tbsp at a time, whisking rapidly, only adding additional milk after the sauce is absorbed and thick. Add the milk and cream; the sauce will be smooth. Simmer for 15 minutes, often stirring, to cook out the flour and thicken the sauce even more. Remove from the heat and toss in the cheddar, nutmeg, and salt and pepper to taste.

STEP 1
Preheat the oven to 200 degrees Celsius/fan to 180 degrees Celsius/gas 6. Stir the ciabatta with 2-3 tablespoons olive oil, add the sea salt and thyme and toss again. Cook on a baking pan for 10-15 minutes until crisp and golden.
STEP 2
Cook the leeks in a large knob of butter until softened for the soup—Cook for 5 minutes after adding the cauliflower. Bring the stock and milk to a boil, then reduce to low heat and cook for 20-25 minutes or until the cauliflower is tender.
STEP 3
Smooth out the soup using a stick blender. Reheat gently, then toss in the cheeses until melted. Serve with the croutons on top.

4. Cauliflower Mac’ n’ Cheese
Method
STEP 1
In a saucepan, melt the butter and whisk in the flour. Cook for 3 minutes, constantly stirring, before gently whisking the milk to make a smooth sauce. Cook for 4 minutes, and then remove the garlic. Stir in the mustard, cheddar, and gruyère until melted—season with salt and white pepper to taste.

Preheat the oven to 220°C/fan 200°C/gas mark 7. In a pot of salted water, cook the cauliflower wedges until tender. Scoop out with a slotted spoon and thoroughly drain.
STEP 3
Cook the macaroni in the same water according to the package directions. Drain thoroughly, then rinse with cold water and drain again. Mix the macaroni and cauliflower with the sauce carefully and place in a greased 20cm x 30cm ovenproof dish.

Bake for 20-25 minutes until golden and bubbling, and sprinkle with grana Padano or parmesan. Allow for 5 minutes before serving.

5. Cauliflower Mash
Method
STEP 1
Bring a saucepan of lightly salted water to a boil—Cook for 10 minutes or until the cauliflower is soft.
STEP 2
Meanwhile, in a frying pan over low-medium heat, melt the butter. Cook the garlic for 1-2 minutes, occasionally stirring, until aromatic. Set aside after removing from the heat.
STEP 3
Drain the cauliflower in a strainer before placing it in a food processor. Blitz the cauliflower for 2-3 minutes or until it, is smooth and creamy. Season with salt and pepper, then add the garlic butter (save 1 tbsp for serving), parmesan, and sour cream and mix for another minute.
