Peel and halve the cooled eggs while the broth simmers. After resting, thinly sliced pork belly with a sharp knife.

Cook miso stock in the pan till boiling. Reduce heat to medium and add spinach and fine egg noodles after bubbling. Cook until noodles are tender and spinach gently wilts, 2-3 minutes. Voilà! Prepared miso broth.

While the soup simmers, cut the cold eggs in half. Half, deseed, and coarsely slice red chilies. Finely slice spring onions. 

Serve cups of miso broth. In each bowl, add baked mushrooms, aubergines, and half eggs. Top with chopped spring onions, chili, and toasted sesame seeds. If you dislike spice, beware. Your homemade miso noodle dish is excellent!
