Ingredients for the Miso Aubergine Recipe- 

2 medium aubergines

1 tablespoon sesame oil

1 tablespoon vegetable oil

2 tablespoons miso paste

2 tablespoons mirin

1 tablespoon honey

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon grated ginger

Preheat your oven to 200°C (180°C fan)/390°F. Line a baking tray with parchment paper.

Cut the aubergines in half lengthways, and score the flesh in a criss-cross pattern. This will allow the aubergine to cook more evenly and absorb more flavor from the glaze. Be careful not to cut through the skin.

Brush the aubergines with sesame oil on both sides, making sure to coat them evenly. This will help the aubergines get a nice golden brown color when roasted.

Place the aubergines on the lined baking tray, cut-side up. Drizzle a little bit of vegetable oil over the flesh of each aubergine half to help keep them moist while roasting.

Roast the aubergines in the preheated oven for 25-30 minutes, or until the flesh is soft and golden brown. You can check if they’re done by poking them with a fork. If the fork goes in easily, they’re ready.
