Cooking receipe of Crab Linguine

Ingredients (serves 2)

  • 10g chives
  • 1 lemon
  • 5.5g Dijon mustard †
  • 1/2 tsp dried chili flakes
  • 100g white Orkney crab meat †
  • 5.5g vegetable stock mix
  • 190g linguine †
  • 30ml Chinese rice wine
  • 40g Cornish clotted cream †
  • 3 garlic cloves
  • 2 tomatoes
  • Olive oil
  • Pepper
  • Salt

Cooking Instructions:

For 2 people [double for 4]

Step 1:

  • Boil a kettle of water.
  • Score a cross very lightly in the base of the tomatoes and place them in a large, heat-proof bowl.
  • Cover the tomatoes with boiled water, ensuring they are fully submerged, and set aside for 5 minutes to loosen the skins.

Step 2:

  • Add linguine to a pot of boiled water with a pinch of salt.
  • Bring the water to a boil over high heat and cook the linguine for 8 minutes or until it is cooked with a slight bite.
  • While the pasta cooks, drain the tomatoes and refill the bowl with ice-cold water. Set the tomatoes aside to cool.
  • Once the pasta is cooked, drain it and reserve a cup of the starchy pasta water.

Step 3:

  • Reboil the kettle.
  • Finely chop the chives.
  • Zest half of the lemon, taking care to grate lightly and avoid the bitter white pith.
  • Peel and finely chop or grate the garlic.
  • Dissolve the vegetable stock mix in 50ml of boiled water.

Step 4:

  • Drain the tomatoes and peel off the skins, starting from the scored crosses.
  • Quarter the tomatoes, scoop out and discard the seeds, and dice the tomato flesh into small pieces. This will be your tomato concasse.

Step 5:

  • Heat 2 tablespoons of olive oil in a large, wide-based pan over low heat.
  • Once the oil is hot, add the chopped garlic, chili flakes (adjust the amount based on your heat preference), and lemon zest.
  • Cook for 1 minute until the garlic is golden and aromatic.

Step 6:

  • Add the Chinese rice wine to the pan and cook for 1 minute or until it evaporates.
  • Once evaporated, add the vegetable stock and cook for a further 2 minutes until it reduces down to a sauce.

Step 7:

  • Remove the pan from heat and stir in the crab meat, clotted cream, Dijon mustard, half of the tomato concasse, and half of the chopped chives. Save the remaining tomato concasse and chopped chives for later use.
  • Add the cooked linguine and squeeze the juice of half a lemon into the pan to create a creamy crab linguine.
  • If the sauce appears dry, add a splash of the starchy pasta water.
  • Serve the creamy crab linguine topped with the remaining tomato concasse and chopped chives.
  • Garnish with a lemon wedge and season with a pinch of salt and pepper to taste.

† Note: Adjust the quantities based on personal preference or refer to the original recipe for specific measurements.
