Ingredients

  • 2 chicken thighs, bone-in and skin-on (250g)
  • 160g fine green beans
  • 50g soft cheese
  • 1 carrot, chopped
  • 5.5g Dijon mustard
  • 2 white potatoes
  • 185g can of butter beans, drained and rinsed
  • 11g chicken stock mix
  • 80g baby button mushrooms
  • 1 tsp oregano (dried)
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Flour

  1. Preheat the oven to 180°C or 350°F.
  2. Dry chicken thighs by patting them with paper towels and season them with salt and pepper. Drench the chicken thighs in flour, shaking off any excess.

  7. Return the chicken thighs to the pot, ensuring they are submerged in the broth. Take a lid, cover the pot and put it into the oven.
  8. Cook for 45 minutes or until the chicken is cooked through and the vegetables are tender. Bring the pot out from the oven. It will take a few minutes to cold down.
  9. Serve the hotpot in bowls, and enjoy!
